In the Star
Trek sim , the USS Eagle, we play a variety of characters from different
cultures and different worlds. A sim is an online role playing game. Ours
is played in a chatroom. We type in text and play characters in a story.
This is a page for the Captain's family and culture. It is written
as if he posted it. He is half Chinese and half Greek and enjoys cooking,
when he's not out saving the galaxy. If you would like information on our

links below. The recipe comes from his father's side of his family. For those of you don't know what a yia yia is, she is a grandmother.
Meringue Cookies - Bezethes from
the Kematsopoulos Family Recipe Box
Makes four dozen
Ingredients
4 egg whites at room temperature
1 teaspon fresh lemon juice
1 cup sugar
0.5 teaspoon vanilla
Finely chopped toasted blanched almonds
Prep:
1. Divide the sugar into four parts.
2. Line baking sheet with waxed paper.
3. Butter and flour paper.
4. Preheat oven- 225 degrees Fahrenheit.
Directions:
1. Beat the egg whites at a low speed until foam and still soft.
2. Add lemon juice.
3. Slowly increase speed to moderately high.
4. Add 0.25 cup sugar.
5. Beat one minute.
6. Add 0.25 cup sugar.
7. Beat one minute.
8. Add 0.25 cup sugar.
9. Beat one minute.
10. Add 0.25 cup sugar.
11. Add vanilla.
12. Beat until stiff enough to make shapes.
13. Put one teapsoon of meringue about 2 inches between each other on the waxed paper
14. Sprinkle tops with almonds.
15. Bake at 225 degrees Fahrenheit for one hour.
16. Cool on wire rack.
Variations:
1. Use 3 egg whites, 1 cup sugar, 1 teaspoon vanilla extract and 12c ounces of chocolate chips.
2. Beat egg whites until stiff.
3. Add in sugar as above.
4. Place on sheet as above.
5. Bake at 300 degrees Fahrenheit for 30 minutes.
6. Cool.
