Norwegian Fish Balls- Fiskeboller
from the Unstoffe Family
Ingredients
1 lb. haddok and/or halibut
1 teaspoon salt
2 egg whites
Dash of nutmeg
0.50 teaspoon cornstarch
1 cup cream
1 cup milk
Prep:
1. Cook beets.
2. Peel and dice beets.
3. Core and peel apples.
4. Dice apples.
Directions:
1. Clean fish and remove bones and skin.
2. Put twice through a fine grinder.
3. Add the egg whites to the fish and put through the grinder again.
4. Add the remaining ingredients except milk and cream.
5. Grind again.
6. Beat with electric mixer and slowly add the cream and milk.
7. Form into balls.
8. Poach in water for 20 minutes.
9. Serve with a heavy cream sauce and sprinkle curry powder over it.
Variations:
Fry them in butter!
